Acacia is a valuable melliferous plant. During the months of May-June the bees extract from it nectar and produce acacia honey. More honey is extracted from older trees. This is due to the fact that even in drier season the well-developed and deep root system of the acacia reaches more humid soil strata and thus greater quantities of nectar are secreted.
With its specific gentle flavour, very pleasant taste and and its very slow crystallization the acacia honey is one of the most popular and loved types of monofloral honey.
